Preheat the oven at 170 degrees celcius and grease and line a 9x9 inch baking pan
Melt together the butter and chocolate in a saucepan on a low heat
Take the pan off the heat, add in the sugars and melt into the chocolate mixture until the sugar is dissolved and the mixture looks shiny on the surface
Add in the eggs one by one and mix well
Then add in the vanilla, salt and coffee
Sift in the dry ingredients and fold it in , make sure everything is well combinedbut do not over mix!
Pour the mixture into a baking pan and bake for 25 - 35 or until a toothpick comes out with a few crumbs
Notes
- You can add in chocolate chips, nuts, dried fruit or anything that takes your fancy once the batter is ready.- If you don't have greaseproof paper use can flour the baking pan- You can use 30-35% chocolate if you prefer a lighter chocolate taste
